Chelsea Market in New York is the site of culinary showdowns between some of the country’s hottest chefs. In each hourlong episode, three chefs have exclusive, after-hours access to the market’s inventory to execute a range of creative dishes. The winner is awarded a cash prize equal to 10 times the value of the ingredients he or she used, and the losers pay their own tabs. So each competitor must weigh a desire to use the most expensive and exotic ingredients against the risk of an outlandish bill.
