After grievances are aired, experienced restaurateurs Andrew Gruel and Anthony Dispensa work with each proprietor, who looks to increase business by completely making over the establishment’s menu, decor and even staff. Gruel is founder and executive chef of Slapfish Restaurant Group, the award-winning food truck-turned-international brick and mortar, and Dispensa is the group’s West Coast director of operations.
